Just popping in for a quick post to say that this weekend was great because there was SUN! Eugene has seen rain on 145 of the past 208 days and it’s been the worst. Finally, the forecast for the next week says there will be sun for most of the days instead of the usual 100% rain. Life is so much happier when it’s sunny!
To all of my California friends and family: you don’t know how great you have it.
Saturday morning started off really slow. I did an easy morning run and did some solo journal time. Then in the afternoon we headed to PK Park where Tony performed the National Anthem for the Ducks vs. Sun Devils baseball game.
What a stud.
We stayed and watched the rest of the game. The Ducks ended up losing 3-4 which was kind of a bummer, but it was still fun and we replenished some much needed vitamin D.
Afterwards we headed to the Whit neighborhood in Eugene. It’s as Eugene as you can possibly get. We’ve been wanting to try out Pizza Research Institute for a long time and post-baseball was the perfect time to go.
PRI is a vegetarian/vegan pizza restaurant with a very unique menu. We happened to go at the very end of happy hour, so we each ordered a personal pizza (2 for T) and a half house salad and it was such a great deal!
I ordered the vegan asparagus and roasted garlic pizza. It also came with sliced tomatoes on top. I don’t really dig out-of-season tomatoes so I gave them to Tony.
The salad was super yummy! The pizza was just eh. I thought they put too much vegan cream sauce, but the red sauce was delicious. Next time I’ll definitely ask for less sauce or just go with the a cheese option. That’s good too. 😉
Tony went with the Mushrooms, herbed zucchini, and smoked cheddar pizza. The other was a chevre, balsamic braised eggplant, and caramelized onion. I was able to sneak a few bites of both and I LOVED the eggplant one. I should have just went with that one… next time!
Other Fun Things
I’ve been on a HUGE smoothie kick. The only thing I want to eat all day everyday is smoothies and I’m okay with it. Sunday morning started off slow with journaling, reading scriptures, a little meditation and stretching, and this super delicious green smoothie. My favorite combo right now is 1 frozen banana, about 1/2 cup frozen mango, tons of spinach, almond butter, homemade almond milk, 1 tsp. maca powder (good for the lady hormones!), and Vega Proteins & Greens vanilla protein powder.
The taste of the protein powder definitely takes some getting used to, but I love it so much now. Costco sells a big tub of it and it lasts forever. I CRAVE these smoothies all of the time.
I topped it with super simple homemade granola. Eaten in a robe in morning sunshine was perfection. I adore mornings.
My blender is not so good, so that’s why there are specks of greens in there. I’ve been seriously considering splurging and buying a refurbished Blendtec… thoughts??
The rest of Sunday consisted of church, a picnic in our living room, and lounging around. We also went on a little late afternoon scooter ride down by the river and it was the most fun I’ve had in a long time.
It felt amazing to be silly and act like a kid even just for a little bit. I need more play in my life. Anyone feel the same way?
I’m very grateful for a couple of very fun, restful, and sunny days.
