Another week, another roundup up delicious recipes.
It’s my birthday weekend, woo hoo! I’m turning 23 and it feels different. I’m really in my twenties now… woof. There are so many changes that happen in your 20s, it’s crazy. So far I’ve gotten married, graduated college, got my first job… and it’s only the beginning. Exciting and crazy stuff.
ANYWAY! Let’s get to the food.
Here’s what I got in this week’s lovely box of fresh goods inspiring all of the recipes below.
This was the most varied lot yet! Insert all of the heart eye emojis here.
Mixed lettuce, romaine, onion, beets, carrots, potatoes, cauliflower, tomatoes, and corn.

Because I can’t think of a better way to start the day. I’m thinking I’ll make these for my birthday breakfast.
Summer Vegetable Frittata by Naturally Ella
Eggs are my go-to food for when I’m busy. They’re cheap, quick, and can be made into just about anything for any meal of the day. My motto is: “when in doubt, throw an egg on top.” This summer vegetable frittata is perfect for using up random odds and ends leftover in the fridge!
The Best Roast Potatoes by Serious Eats
Frittata + crispy roasted potatoes = a match made in heaven. It’s happening this week.
Grilled Chicken Caesar Salad by Recipe Runner
Caesar salad is one of my favorite foods. Sensing a birthday week theme here? This recipe is perfect for work lunches! But make sure you pack croutons on the side. No one should eat soggy croutons. Ever.
Beet, Arugula & Goat Cheese Grilled Cheese by BS’ in the Kitchen
There are no words.
Roasted Beet Hummus by the Full Helping
How pretty is beet hummus?? It could go on a cake it’s so pretty. But that would probably be really gross. Don’t do that. Make this instead.
Cauliflower, Corn, & Black Bean Tacos by Flourishing Foodie
Tacos are my favorite. Ever had cauliflower in a taco? Well you definitely should try it. It’s fab.
Angel Food Cupcakes by Completely Delicious
I guess getting older means you’re stuck making your own birthday cake. Angel food cake is one of my favorite desserts of all time. I’m definitely making these on Sunday for my birthday and putting a candle in it and making a wish. I hope that’s not bad luck.
