It’s time for another week of recipes inspired by my lovely CSA box from Food for Lane County Youth Farm! Receiving a box full of amazing produce every week is the best. It’s inspired me to cook with ingredients I wouldn’t normally buy at the store. I’ve been making so many interesting recipes and it’s been so much fun!
July has been a super busy month. It began in Lake Tahoe, California with my family. The next weekend we went camping at Smith Rock State Park. Then we rafted the Deschutes river. This weekend I’ll be working at the Eugene Symphony Summer Concert in the Park and then next weekend I turn 23! Woo.
Unfortunately, I haven’t had as much time to cook as I would like to, but somehow I’ve been able to make all of the recipes I’ve been sharing every week. Like this pizza I made last night…

Homemade carrot-top pesto is one of my favorite ways to use all those lovely greens that come with carrots. I can’t wait to serve this dish alongside this easy crock-pot chicken!
Pesto Zucchini Lasagna Roll-Ups by The Seasoned Mom
I’m definitely not a picky eater. I never have been. But there is one food that I’ve always struggled with… zucchini. For some reason it’s just my fav. This recipe looks delicious, though! And since I’ll probably have lots of leftover pesto, these lasagna roll-ups look like a fun and simple way to use that zucchini.
Chinese Cabbage Stir Fry by The Woks of Life
I have soooo much cabbage to use up. I didn’t use mine all up from a couple of weeks ago and it’s starting to go bad in my fridge. I’m worried that sauerkraut won’t come out if it’s already turning brown, so I’m going to try this one out soon. Who can say no to stir fry!
Cabbage Curry by Swasthi’s Recipes
And since I’ll probably need another way to use up cabbage… this Indian cabbage curry sounds endearing. I can’t wait to make this new recipe!
Roasted Cauliflower Salad with Lemon Tahini Dressing
I adore roasted cauliflower. This recipe is the perfect post-work and workout refuel. It’ll make a great lunch the next day, too! I also like that it’s only $1.75 per serving! Wowza. Talk about a serious money saver.
How To Make The Best BLT Sandwich by Joy the Baker
Is there anything better than a classic BLT? I love this step-by-step guide on how to make the perfect BLT. My mouth is watering just thinking about fresh tomatoes, bacon, and homemade sourdough bread. Mmm.
Plum Galette by Kitchen Konfidence
I’m not very good at baking pies. It’s definitely something I need to work on. Luckily, a galette is basically pie but WAY easier! All you need is some good flaky crust, top it, fold it, and bake. Since I probably won’t have plums leftover to actually make this with the fresh ones, I may stop by the farmer’s market to pick up a few more for a lovely Sunday dessert. YUM!
