I hope all of you had a wonderful 4th of July holiday! Tony and I traveled to California to spend time in Tahoe with my family. It was a wonderful vacation full of the necessities: food, laughter, and lots of sunshine.
When we got home on Wednesday evening, I picked up our CSA box. Check out what we got this week!
Mixed greens, broccoli, red leaf lettuce, radishes, yellow squash, red potatoes, basil, onion, kale, and cabbage.
Tony and I are leaving to go camping for the weekend, so I have to get creative with recipes this week. I also want to stick to things I have in my fridge and freezer instead of going to the store. I’ll have to go to the store for a few things, but not much. Those radishes are my favorite for eating raw with hummus for a snack! Mmm.
Here’s what I’ll be cooking up this week:
Yellow squash isn’t my favorite vegetable. I don’t know why… it’s just eh. This fun take on traditional bruschetta looks delicious and is the perfect way to use up summer produce and eggs. I made this for dinner last night and I can confidently say it was incredible!
Since I’m getting a little sick of salads, lettuce wraps have become a weekly staple. I have some chickpeas I sprouted and cooked a while back that I’ll use to make these patties. I’ll probably roast up those fresh potatoes to serve along with these wraps!
Also, a quick PSA: Minimalist Baker has been one of my go-to websites for finding great recipes for a long time. I’ve learned that I can pretty much trust every single one of her recipes. Check her out!
Quinoa salads are a great make-ahead option for lunches throughout the week. I’m going to whip this together before we head out camping to have on hand for an easy meal on the go.
I usually make sauerkraut with cabbage. But since I already have a bunch in the fridge, this egg roll in a bowl looks awesome! I’ll have to pick up a few extra ingredients at the store to make this one. It’ll be worth it!
I have lots of eggs right now, so I have to use them up somehow! Farro is one of my favorite grains as of late and this easy meal looks super satisfying.
I’ve been obsessed with making homemade coconut milk ice cream since I bought an ice cream maker a few weeks ago. Brownies and ice cream are a match made in heaven!
